Ingredients:
Lard: 1 tbsp
Oxtail: 1kg 2lb
Chopped onion: 1 unit
Chopped celery: 1 stalk
Chopped garlic: 3 cloves
Chopped carrot: 1 unit
Chopped Tomato: 3 units
Salt: 1 tbsp.
Cumin to taste
Annatto to taste
Red pepper flakes to taste
Bay leaves
Water to cover the oxtail

How to make:
Remove excess fat from the oxtail.
Heat a spoonful of lard in the pan, add the tail and fry well.
Add the remaining ingredients.
Add water to cover the tail.
Cover the pressure cooker and when pressure builds, leave it for 40-50 minutes.
